To prepare, tilt the head slightly, cut off the part where the intestines are attached, and then make a cut in the center of the head, being careful not to burst the meat. After removing the meat tube and cutting out the internal organs, cut out the eyes of the octopus and remove the suction cups on the inside of the legs by pressing them with your thumbs. Sprinkle coarse salt on it and knead it between your fingers until it foams up to remove slipperiness and dirt. Wash it several times in clear water. When storing, clean it, put it in a pack, and store it in the freezer.

[Ingredients] 750g (3 pieces) of raw octopus, a little minced garlic, a little salt, a little sesame oil, a little sesame seed

1. Wash the live octopus feet thoroughly and finely chop them.
2. Remove the internal organs of the head, wash thoroughly and cut into appropriate sizes.
3. Place octopus 1 and 2 on a plate, sprinkle a little salt, and sprinkle minced garlic, sesame oil, and sesame seeds evenly.


▶Stir-fried Octopus(낙지볶음)
[ingredient]
4 large octopuses, a little cabbage, 1/2 onion, 1 green onion, 2 green peppers, 2 red peppers, a little sugar, 1/3 zucchini, a handful of water parsley (can be used raw), 1 tablespoon sesame oil,
<Seasoning> 4 tablespoons red pepper powder, 2 tablespoons red pepper paste, 3 tablespoons soy sauce, 2 tablespoons sugar, 2 tablespoons minced green onion, 1 minced garlic, 2 soybean paste, pepper, a little soybean paste (optional)

1. Clean the octopus. Insert scissors into the head, cut it, remove the meat tube and internal organs, and wash it by massaging it with salt or flour.
2. Cut the prepared octopus into 5cm long pieces.
3. Trim the green onion, cut it in half lengthwise and cut it into 4cm pieces, and cut the onion into thick strips. Cut green and red peppers diagonally into 0.3cm thick pieces and remove the seeds.
4. Put plenty of oil in a pan over low heat, add red pepper powder to make red pepper oil, and fry the green onions to create aroma.
5. Stir-fry the firm vegetables first. Stir-fry cabbage, onions, and carrots. When the vegetables are soaked in red pepper oil, add octopus and seasoning sauce and stir-fry.
6. When the octopus is cooked to some extent, add soft vegetables, zucchini, and peppers and stir-fry.
7. Lastly, add water parsley and 1 tablespoon of sesame oil to finish.

Tip.
When making stir-fried octopus, bean sprouts are sometimes added. Since bean sprouts are an alkaline food and octopus is an acidic food, the ingredients play a role in neutralizing each other, making it taste better, and the taurine in octopus promotes protein synthesis, which helps in muscle recovery and liver detoxification. , It helps stabilize the nerves and reduces blood cholesterol and neutral fat, making it good for preventing various adult diseases.
